I've been following the whole lab-grown meat thing for a while now mainly because I just started intern at this lab and I'm not allowed to do any serious work or culture yet and as you can expect I came in super excited about the tech and all the sustainability goals, but now that I'm actually behind the scenes, I'm seeing some of the struggles firsthand.

One thing I wasn't expecting is how tricky it still is to get the taste and texture just right, we've got samples that look exactly like real meat, but when we do tasting panels, a lot of the feedback is about aftertastes or the chew not feeling 'natural' I guess, some of the scientists say it's probably from the growth medium or how the fat integrates or doesn't, I'm honestly wondering if the core challenge is technical or if it's something we just haven't even identified yet
 
I think lab-grown meat will never fully replace conventional meat not because of technology limits, but because people psychologically want "real" suffering attached to their food. No matter how perfect the taste or texture gets, consumers subconsciously crave the moral weight behind eating an actual animal
 
Another thing is, I think real meat has complex biochemical changes we don't fully replicate yet, so yeah, part of the challenge might be something we haven't even discovered

You're absolutely right to focus on the microscopic structure affecting the chew and mouthfeel.
These are still largely technical challenges that scientists are actively working to solve, whether it's finding the perfect scaffolding or optimizing cell differentiation to get that natural bite.
It sounds like you're at an incredible vantage point with your internship!
