They're going all in on cultivated meat with a huge $140M investment in a brand new innovative facility in Illinois called "Rubicon". This 187,000 sq foot space will have the potential to produce as much as 30 million pounds of cultivated meat. As one of just two US companies with FDA and USDA approved cultivated chicken, UPSIDE is stepping up big big time. With a recent $400M Series C round and plans to scale, theyre on track to be a leader in the industry and could be the first to genuinely make cultivated meat mainstream. This could be a game changer for the future of food.

It's impressive, sure and huge step forward for food tech but there's something quietly unsettling about replacing farms with facilities, yunno sometimes progress always feels like it comes with a cost we won't fully understand until much later.

Whoa, 30 million pounds? That's a huge deal! I see acapellana's point, though, there are always hidden downsides when things change this much. Still, if it's cheap, safe to eat, and tastes good, I'm game to give it a shot. Would you swap your usual chicken for this if it showed up at your local grocery store?
